Chef Dustin Valette presents a special menu from Valette restaurant, a downtown Healdsburg favorite devoted to making the most of Sonoma County’s top-notch produce, meats and wine.
Opening Valette in 2015 realized a lifelong dream for Chef Dustin, a Geyserville native who began washing dishes as a teenager in a local restaurant. He went on to graduate from the Culinary Institute of America in Hyde Park, New York, and has worked in the kitchens of such celebrated restaurants as Aqua, Bouchon and Dry Creek Kitchen. His menu:

Among the locally sourced ingredients is Volo Chocolate, a Windsor producer that follows a “bean to bar” model using products from North Bay vendors like Clover Dairy and Flying Goat Coffee.
